Pie in the Sky

via Hummingbird Bakery
Happy Friday, lovey dovies! So happy that the week has come to an end and that the next two days will probably consist of sleeping late : )

We plan to get up early on Saturday, run a half marathon, organize our closet according to color and prepare a six course gourmet dinner for our 20 closest friends.

Yeah, not so much.

In reality, we plan to make chili, watch the Hogs game and test out pie recipes in preparation for Thanksgiving. We're incredibly ambitious on the weekends, you see.

But about the actual making of those aforementioned pies...

I need help, y'all.

I've attempted a pie once. It was nothing short of a trainwreck. I mean the crust burned, filling was oozing out the top, the smoke detector was going off...pretty much, it was a smashing failure.

(I'd recount all the gory details, but I'm pretty sure I've blocked it out of my mind. I like to think of it as Post-Traumatic Culinary Disaster Stress Disorder.)

Or PTCDSD, a brief and easy to remember acronym.

Anywho, when the fams were discussing where the Thanksgiving festivities would be held this year, I , the naive newlywed, proudly raised my hand, ready to tackle the duties of holiday hostessing. But now, well, I'm kind freakin'.

Stephen purchased a turkey fryer from Amazon last week and my mom-in-law is making rolls. My dear momma has volunteered to come up a day early and help me prepare sides and such. But the one, lingering dark spot over my head are those darn pies...

I'm good with cakes, better with brownies and have been known to kick booty at cookies. But it seems that anything requiring making and rolling dough are just...welll...hard.

So here's where you come in...

I need y'all to email me some pie recipes. Pumpkin, strawberry, peanut butter, sweet potato, whatever and whathaveyou. Just send it.

What do you get for this? Well, a fabulous little gift. I'm not sure yet, because I haven't bought it. (The picture of thought and preparedness, I am.)

But it will be fabulous. You can bet your Kate Spade slingbacks on that.

Anywho, I'll pick the top 3 pie recipes, post them on here and have y'all vote on which is your favorite. This may require you to actually make the 3 pies. Or you can just vote on which is the prettiest. The recipe that gets the most votes, get a gift from moi.

To keep this contest fair, the judge will be my husband. He doesn't know who in the Sam Hill any of y'all are, so he'll be very diplomatic about the whole ordeal. I'll even blindfold him, if it would make y'all feel better.

Ready, set....EMAIL YOUR PIE RECIPIES!!

Be blessed, lovelies-

  4. I got nothin! I have a feeling I'm even a little less kitchen oriented then you. We are hosting Thanksgiving this year too. First time. But hubby is running the show being the awesome cook that he is. I'm not worried. I'll assist.

  5. This is my ABSOLUTE most favorite recipe and it is super easy to make (I usually don't do the nuts as a personal preference). It is super rich but my daddy still prefers it warm with ice cream ;). Here's the link! http://www.verybestbaking.com/recipes/28218/NESTL%C3%89-TOLL-HOUSE-Chocolate-Chip-Pie/detail.aspx

  7. I cannot cook to save my life but have made all three of these pies successfully. I'd also recommend pre-made crusts. If you have a Trader Joe's near you, their frozen crusts are the best...

    Peach Pie
    Frozen pie crust
    1 egg
    5 cups sliced, peeled peaches
    2 tablespoons lemon juice
    ½ cup flour
    1 cup white sugar
    ½ teaspoon ground cinnamon
    ¼ teaspoon ground nutmeg
    ¼ teaspoon salt
    2 tablespoons butter

    Peel and slice peaches
    Preheat oven to 450 degrees
Lay bottom crust in pie pan and brush with beaten egg to keep dough from getting soggy.
Place peaches in a large bowl and sprinkle with lemon juice. Mix gently.
In a separate bowl, mix together the flour, sugar, cinnamon, nutmeg and salt.
Pour mixture over peaches and mix gently.
Pour peaches into the pie crust and dot with butter.
Cover or lattice the top pie crust and brush with the rest of the egg.
Bake for 10 minutes at 450 and then reduce the heat to 350 for 30-35 minutes.
Cover crust edge with foil halfway through if necessary.

    1/8 tsp. cloves
    2 cups pumpkin puree
    3 eggs
    1 cup heavy cream
    1/3 cup milk

    Preheat oven 375 degrees
Form pie crust to pie pan
Whisk brown sugar, cornstarch, salt, cinnamon, nutmeg, ginger, cloves together
Whisk in pumpkin, eggs, cream and milk
Pour filling into unbaked pie crust
Bake for 60-65 minutes or until center is clean

    Apple Pie
    Pie pan
    2 unbaked pie crust
    ½ cup unsalted butter
    3 tablespoons flour
    ½ cup white sugar
    ½ cup packed brown sugar
    ¼ cup water
    8 apples
    1 tsp. cinnamon

    Preheat oven to 425 degrees
Form 1 pie crust to pie pan
    Peel and chop 8 apples
    Melt butter in a saucepan
Stir in flour to form a paste
Add white sugar, brown sugar, water and cinnamon
    Bring sauce to a boil
Reduce temperature and simmer for 5 minutes
Mix sauce with the apples in a separate bowl (save some sauce for the top)
    Pour apples into pie crust

  12. Does it count if I paste Paula Deen's pumpkin pie recipe as it is the best pie I have ever tasted?? If it's not Paula's, it's not perfect. So this is without a doubt the PERFECT pumpkin pie recipe. I make it every year.
    Ingredients
1 (8-ounce) package cream cheese, softened
    2 cups canned pumpkin, mashed
    1 cup sugar
    1/4 teaspoon salt
1 egg plus 2 egg yolks, slightly beaten
    1 cup half-and-half
1/4 cup (1/2 stick) melted butter
    1 teaspoon vanilla extract
    1/2 teaspoon ground cinnamon
    1/4 teaspoon ground ginger, optional
    1 piece pre-made pie dough
    Whipped cream, for topping
    Directions
Preheat the oven to 350 degrees F.

Place 1 piece of pre-made pie dough down into a (9-inch) pie pan and press down along the bottom and all sides. Pinch and crimp the edges together to make a pretty pattern. Put the pie shell back into the freezer for 1 hour to firm up. Fit a piece of aluminum foil to cover the inside of the shell completely. Fill the shell up to the edges with pie weights or dried beans (about 2 pounds) and place it in the oven. Bake for 10 minutes, remove the foil and pie weights and bake for another 10 minutes or until the crust is dried out and beginning to color.

For the filling, in a large mixing bowl, beat the cream cheese with a hand mixer. Add the pumpkin and beat until combined. Add the sugar and salt, and beat until combined. Add the eggs mixed with the yolks, half-and-half, and melted butter, and beat until combined. Finally, add the vanilla, cinnamon, and ginger, if using, and beat until incorporated.

Pour the filling into the warm prepared pie crust and bake for 50 minutes, or until the center is set. Place the pie on a wire rack and cool to room temperature. Cut into slices and top each piece with a generous amount of whipped cream.

Hope you like it and give it a try!

  13. This one is my favorite to make and eat - so easy!

It takes less than 15 minutes to pull together, and it requires no baking. Plus, it's relatively light (although not health food!). And despite the name of the recipe, the lemon flavor is present but not overwhelming. It's my go-to.

    Lemon Pie
    16 oz Cool Whip
    16 oz sour cream
1 can Eagle Brand sweetened condensed milk
1 cup Country Time lemonade mix
    2 9 oz graham cracker crusts (store-bought)

Mix condensed milk and lemonade mix. Add sour cream and then Cool Whip. Mix thoroughly. Pour into crusts. Refrigerate; can be frozen also. Makes two pies.
