DipTacular


One of my most favorite bloggers, BooMama, is doing a dip-themed blog hop today. What is a dip blog?

So glad you asked.

It's where readers all over these grand United States post their favorite dip recipes in honor of college football season. In additon to bargain shopping and Starbucks lattes, there's nothing that touches my southern heart more than a good dip recipe. Besides, any excuse to eat more Velveeta or cream cheese is worth it's weight in gold.

So let us thank the Lord for this thing we call "Dip".

Oh, by the way, here's my favorite dip recipe. Ironically, it does not contain Velveeta or cream cheese. But it's great nonetheless and SO easy to make. It's blonde-proof!



Black Bean Salsa

1 can black beans drained
2 large tomatoes, peeled
1 or 2 jalapeno peppers, seeded and finely chopped
2 green chiles, chopped
1/2 medium onion, chopped
1 very small green bell pepper, finely chopped
1/3 cup mexi-corn
2 teaspoons chopped fresh cilantro (1 teaspoon dried), chopped
1 teaspoon sugar
2 teaspoons cider vinegar
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
Salt and pepper to taste
Combine everything in a big bowl and let it sit for 6-8 hours. Serve with warm tortilla chips.
